Herby Frittata

A tasty vegetarian frittata. Ideal for something different at lunch time.Time and servings

Ingredients
- 1 tbsp of cold pressed rapeseed oil
- 1 handful of parsley, chopped
- 1 tbsp of walnuts, (optional)
- 0.5 dill, roughly chopped
- 4 spring onions, thinly sliced
- 3 eggs
- 30 g of feta, crumbled
- 1 handful of coriander, chopped
- 0.5 tsp of baking powder
- 0.25 tsp of turmeric
Method
Step 1
Heat the grill on high. Whisk together eggs in a large bowl along with the baking powder and turmeric.Step 2
Season with salt and pepper. Stir in most of the herbs, and add the spring onions and walnuts.Step 3
In an ovenproof, non-stick frying pan, drizzle some of the oil. Pour in the mixture and cook for 8 minutes until the egg is nearly set then place under the grill for a minute.Step 4
Sprinkle over the remaining herbs and crumbled feta.
