Hassleback Potatoes

Create these hassleback potatoes for a Christmas dinner with an extra twist!Time and servings

Ingredients
- 12 white potatoes
- 30 g of butter
- 12 sage leaf
- 1 pinch of salt
- 1 pinch of pepper
- 4 tbsp of olive oil
Method
Step 1
Heat the oven to 200c/ 180c fan/ Gas 6.Step 2
Place a potato snugly in the bowl of a wooden spoon and, using a sharp knife, make a row of cuts across the length of the potato. The spoon edges will prevent cutting all the way through. Repeat to prepare 12 potatoes.Step 3
Place 30g butter and 4 tbsp of olive oil in a non-stick roasting tin and heat on the hob until bubbling. Add the potatoes turning to coat in the fat.Step 4
Place a sage leaf in one cut of each potato, then roast for about 1hr, turning occasionally to brown all sides. Season with sea salt and a twist of black pepper.
