
Ingredients
- 2 x 225g halloumi blocks, cut into chunky slices
- 3 tbsp olive oil
- 1 tsp sweet paprika
- Juice of 1 lemon
- 1 tsp dried oregano
- 2 garlic cloves, minced
- 1 tbsp ground cumin
- Salt
- 1 tbsp English mustard
- 125g Greek yogurt
- 1 tbsp honey
- Black pepper
- ¼ lettuce, shredded
- 4 flatbreads, griddled
- Salad, e.g. sliced tomatoes and cucumbers
Method
Step 1
Marinate the halloumi by combining all the marinade ingredients (olive oil, paprika, lemon juice, oregano, garlic, cumin, salt, and pepper) in a medium bowl and stir. Add the halloumi slices, ensuring they are fully coated in the marinade. Set aside for 10 minutes.Step 2
In a small bowl, mix together the English mustard, Greek yogurt, honey, and a pinch of salt and pepper. Set aside.Step 3
To cook the halloumi, heat a griddle pan over a medium-high heat. Add the marinated halloumi (reserve any leftover marinade) and griddle for 2 minutes on each side, or until golden brown and slightly charred.Step 4
Add a handful of shredded lettuce to the bowl of remaining marinade and toss to coat. Spread a generous dollop of mustard yogurt on each flatbread. Top with the marinated lettuce, your favourite salad ingredients (e.g., sliced tomatoes and cucumbers), and the griddled halloumi.Step 5
