Ingredients

  • 300g cooked chicken, shredded (leftover roast or rotisserie chicken works well)
  • 200g bag of tortilla chips
  • 150g grated cheddar and mozzarella mix
  • 200g can black beans, drained and rinsed
  • 2 green chillies, a large, mild-medium hot variety, mostly finely chopped with a few slices to garnish (leave seeds in if you like it spicy)
  • 2 heaped tbsp soured cream or Greek yoghurt
  • Handful coriander, chopped
  • 1/2 lime, juiced
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic granules
  • 1/2 small red onion, finely chopped
  • Guacamole, to serve
  • Tomato salsa or pico de gallo, to serve

Method

  1. Step 1

    Heat the oven to 200°C/180°C fan/gas 6. First make the green chilli chicken mix. In a bowl, combine the shredded chicken, green chillies, soured cream, cumin, garlic granules, lime juice, and a good pinch of salt and pepper.
  2. Step 2

    Next, in a large ovenproof dish or baking tray, spread out half the tortilla chips. Scatter over half the chicken mixture, half the cheese, some black beans and red onion. Repeat with the remaining tortilla chips, chicken, cheese, and toppings to create layers.
  3. Step 3

    Bake for 20 mins, or until the cheese is melted and bubbling.
  4. Step 4

    Sprinkle with fresh coriander and sliced chilli, serve hot with extra soured cream, guacamole, and salsa on the side for dipping.
