
Ingredients
- 150g self-raising flour
- 1 red apple, grated
- ½ tsp baking powder
- 150ml double cream
- 2 limes zest and wedges to serve
- 50g Greek yoghurt
- 1 tbsp light brown sugar
- 1 egg
- 110ml whole milk
- 1 tbsp neutral oil (like veg or sunflower)
Method
Step 1
Put the self-raising flour, apple, baking powder and sugar into a bowl with 1 tsp flaky salt and mix. Whisk the egg and milk together and then gradually whisk it into the dry ingredients until you have a smooth batter.Step 2
Then, put the cream and sugar into a bowl and whisk until the cream holds thick peaks, fold in the lime zest and Greek yoghurt and set aside until needed.Step 3
Next, put ½ the oil into a pan over a medium heat, once hot, spoon 2 tbsp of the pancake batter into the pan and spread into a small circle. Repeat to fill the pan, you may have to do this in 2 batches. Cook for 2-3 mins until small bubbles form on top of the pancake and then flip. Cook for 2-3 mins more on the other side.Step 4
Serve the pancakes with the cream on top and a little extra lime zest on top and lime wedges on the side.
