Goats Cheese Stuffed Tomatoes

Ingredients
- 1 handful of fresh basil, minced
- 110 g of goats cheese
- 12 tomatoes
- 0.5 tsp of freshly ground black pepper
- 0.5 tsp of salt
Method
Step 1
Bake tomatoes in a preheated oven set at 180 C for 45 minutes.Step 2
In a bowl mix together the cheese, basil, salt and pepper until well blended.Step 3
When the tomatoes are cooked through, wait for them to cool down then slice the tops off.Step 4
With a small spoon carefully scoop the pulp out to make a hollow and sturdy shell. Drain off any juice that may be in the tomato shells.Step 5
Fill the tomatoes with the mixture and carefully place the top back on. Repeat until all the mixture is used.Step 6
Arrange onto a plate or platter and serve.
