Ingredients
- 1 tin of chopped tomatoes
- 1 tin of full fat coconut milk
- 250 g of diced turkey fillets
- 30 g of sunflower oil
- 2 sweet potatoes, peeled and diced
- 2 tbsp of tomato puree
- 50 g of laksa paste
- 1 small white onion, sliced
- 1 tsp of white sugar
- 1 chicken stock cube
- 2 tsp of tamarind sauce
Method
Step 1
Heat your oil in a heavy bottom saucepan. Add your Turkey and Fry off until slightly browned.Step 2
Once browned add your curry paste and cook for a further 4 minutes. Then add your onions and sweet potato.Step 3
Add the remainder of your ingredients and bring to the boil. Once boiling, return to a simmer for 25 minutes.Step 4
Your curry will be ready and serve with some steamed vegetables or wild rice.
