Goan Curry with Diced Turkey Fillet

A healthier version to the classic Lamb alternative. A warming turkey curry perfect for a midweek dinner.

Ingredients

  • 1 tin of chopped tomatoes
  • 1 tin of full fat coconut milk
  • 250 g of diced turkey fillets
  • 30 g of sunflower oil
  • 2 sweet potatoes, peeled and diced
  • 2 tbsp of tomato puree
  • 50 g of laksa paste
  • 1 small white onion, sliced
  • 1 tsp of white sugar
  • 1 chicken stock cube
  • 2 tsp of tamarind sauce

Method

  1. Step 1

    Heat your oil in a heavy bottom saucepan. Add your Turkey and Fry off until slightly browned.
  2. Step 2

    Once browned add your curry paste and cook for a further 4 minutes. Then add your onions and sweet potato.
  3. Step 3

    Add the remainder of your ingredients and bring to the boil. Once boiling, return to a simmer for 25 minutes.
  4. Step 4

    Your curry will be ready and serve with some steamed vegetables or wild rice.
