Gluten Free Chocolate and Pistachio Brownies

This flourless, gluten-free brownie recipe uses almonds and pistachios to give them a unique, indulgent flavour.Time and servings

Ingredients
- 225 g of dark chocolate
- 2 tsp of vanilla essence
- 3 eggs
- 200 g of caster sugar
- 225 g of butter
- 100 g of pistachios, chopped
- 150 g of ground almonds
Method
Step 1
Melt the chocolate and butter together in a bowl over simmering water.Step 2
Remove from the heat, mix in the sugar and vanilla and then beat in the eggs.Step 3
Stir in the ground almonds and chopped pistachios.Step 4
Pour into a lined tin and bake at 170 degrees for 25 minutes.Step 5
Press a knife in check the brownies are cooked, it will not come back completely clean but should not be too gooey.Step 6
Leave to cool and set, then slice into squares to serve. Optionally, dust with icing sugar or cocoa powder.
