Ingredients
- 100ml stem ginger syrup
- 100ml maple syrup
- 1 blood orange, zest and juice
- 50g soft brown sugar
- 1 tsp mixed spice
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1.5-2kg gammon
- 1 orange sliced
- 1 cinnamon stick
- 3 bay leafs
- 6 garlic cloves
- 1 onion, sliced
Method
Step 1
For the glaze, simmer the stem ginger syrup, maple syrup, blood orange zest and juice, soft brown sugar, mixed spice, ground ginger and ground cinnamon together for 5 minutes and leave to cool.Step 2
Place the gammon in a large pan and cover with water add the orange, onion, cinnamon stick, bay leaves and cloves. Simmer for 1 hour 20 minutes.Step 3
Remove the gammon from the water and place on a non-stick baking tray / oven dish and brush with the glaze.Step 4
Bake in a preheated oven 150°C (300°F, Gas Mark 2) for 45 minutes brushing a new layer of glaze every 5 minutes.Step 5
Rest the gammon before carving.
