Giant Buckwheat Blini Topped with Tuna Nicoise

Ingredients

  • 70 g of buckwheat flour
  • 50 g of semi-skimmed milk
  • 25 g of unsalted butter
  • 100 g of reduced fat creme fraiche
  • 4 g of dried, fast acting yeast
  • 4 eggs, 2 separated into whites and yolks and 2 hard boiled
  • 60 g of olives
  • 50 g of green beans, blanched
  • 1 tin of tuna,145g (Drained)
  • 70 g of white flour, (Strong is best but plain will work too)
  • 3 tsps of olive oil
  • 0.5 tsp of salt

Method

  1. Step 1

    To make the blini, first warm the milk, being careful not to boil it.
  2. Step 2

    Mix the flours and add the yeast and the creme fraiche, then stir in the milk and the egg yolks. Beat together well.
  3. Step 3

    Warm the butter and add half of it to the mix, incorporating well (keep the other half to fry the pancake later).
  4. Step 4

    Whisk the egg whites to stiff peaks and fold them in to the mixture.
  5. Step 5

    Next, heat a frying pan and add the remaining butter, then add the batter and fry one side on a low heat for 3-4 minutes. When bubbles appear on the top and around the sides of the pan, flip it over and repeat on the other side. While that’s cooking, preheat the oven to 180C.
  6. Step 6

    Turn the pancake out onto a tray and finish in the oven.
  7. Step 7

    Mix all the ingredients together for the nicoise salad, and set aside until needed.
  8. Step 8

    Place the pancake on a serving plate and top with the salad.
