Fruit-packed Flapjacks

This recipe has been developed at home by our chef Jon. It’s a delicious treat for the kids, and is packed full of tasty fruits.Time and servings

Ingredients
- 40 g of sultanas
- 2 tbsp of soft light brown sugar
- 1 small apple, grated
- 50 g of dried cherries, (our chef used Morrisons Luxury Dried Fruits, however you can use any dried fruit you can find, cranberries will work well too)
- 50 g of diced apricots, (about 8 apricots in total)
- 5 tbsp of golden syrup, (approx 70g)
- 100 g of unsalted butter
- 175 g of rolled oats
Method
Step 1
Preheat your oven to 180oc.Step 2
Grease and line a baking tray with greaseproof paper.Step 3
Put the butter, sugar and syrup into a saucepan and melt over a low heat.Step 4
Place the oats and dried fruits as well as the grated apple into a large mixing bowl.Step 5
Pour in the melted butter and sugar with the syrup.Step 6
Stir well.Step 7
Tip the contents into the tray and press down using the back of a spoon, a fish slice or even a potato masher would work (the mixture will be hot so be careful).Step 8
Bake in the oven for 20-25 minutes until golden brown and firm to the touch - be careful as it will be very hot.Step 9
Remove from the oven and leave to cool in the tin.Step 10
Remove from the tin and cut into small treat size pieces.Step 11
You should get about 20 x little bite-sized pieces.
