Ingredients
- 100g caster sugar
- 300ml tequila blanco
- 150ml triple sec
- 150ml lime juice
- 30g pickled jalapenos, 4 left whole and the rest finely chopped
- Lots of ice
Method
Step 1
Tip the sugar into a small saucepan along with 50ml water. Set over a low heat and cook until the sugar has dissolved. Set aside to cool completely and it will keep in a sealed container for up to a month. You can scale the sugar syrup up or down if you need to make a large batch.Step 2
Pour the cooled syrup into a blender along with the tequila, triple sec, lime juice, chopped jalapenos, 1 tbsp of the jalapeno brine and five big handfuls of ice. Blend until well mixed and the ice is slushy, adding more ice if needed. If you like them spicy, you can add more chopped jalapenos.Step 3
Divide between 4 glasses and top with a jalapeno slice. Serve immediately.
