Fragrant and creamy rice pudding

Ingredients
- 750 mls milk (use plant based milk if you wish)
- 100g light brown sugar
- 150g white rice
- 2 tsp of rose water
- 100g pistachios chopped
- A handful of dried rose petals (optional)
- 2 cardamom pods
Method
Step 1
In a saucepan, gently heat the milk and sugar over low heat, stirring continuously until the sugar has dissolved completely.Step 2
Add the rose water and cardamom pods to the milk and stir to infuse the flavours.Step 3
Add the rice to the saucepan and stir well to combine.Step 4
Bring the mixture to a simmer, stirring every 5 minutes for approximately 30 minutes, or until the rice is soft and the mixture is creamy and thick. If it’s too thick add a little milk to loosen.Step 5
Pour the rice pudding into individual bowls and top with chopped pistachios and dried rose petals if using.Step 6
Enjoy hot or chilled the following day–both are delicious.
