Ingredients
- 200g self-raising flour
- 1 ½ tsp baking powder
- 1 tbsp caster sugar
- 1 large egg
- 200ml semi-skimmed milk
- 25g unsalted butter (melted, plus extra for the pan)
- Pinch of salt
- Maple syrup, to serve
- Knob of salted butter, to serve
- 1 pack morrisons the best smoked streaky bacon, optional to serve
Method
Step 1
In a large bowl, whisk together the self-raising flour, baking powder, sugar, and a pinch of salt.Step 2
In a separate jug, whisk the egg with the milk, then stir in the melted butter.Step 3
Pour the wet mixture into the dry ingredients. Whisk gently until just combined. Top Tip: Don’t over-mix! A few small lumps are fine, this is the secret to a thick, fluffy texture. Over-whisking makes the pancakes tough.Step 4
Place a non-stick frying pan over medium heat and add a small knob of butter. Once bubbling, wipe away any excess with a piece of kitchen roll so there is just a thin film of fat.Step 5
Ladle about 2 tablespoons of batter into the pan for each pancake (you can usually fit 2 or 3 in a large pan). Cook until bubbles start to appear on the surface and the edges look set (about 2 minutes). Flip and cook for another 1-2 minutes until golden brown on both sides.Step 6
Stack 3 high on a warmed plate. Place a thick pat of butter on the very top so it begins to melt and pool down the sides and drizzle with maple syrup. For the most authentic experience, add crispy bacon using our airfryer crispy bacon recipe.
