
Feta and Pomegranate Salad

The flavours of salty feta, bitter leaves and slightly sour pomegranate combine brilliantly to give a zing to this summery salad. It’s quick and easy to make and goes perfectly with smoky barbecue flavours.Time and servings

Ingredients
- 4 tbsp of feta cheese
- 1 sprinkle of herbs
- 1 drizzle of extra virgin olive oil
- 1 large handful of salad
- 1 small handful of pine nuts
- 4 tbsp of pomegranate seeds
Method
Step 1
Make a bed of salad leaves and crumble the feta cheese over them.Step 2
Cut the pomegranate in half and squeeze the seeds out over the salad, tossing them into the salad leaves.Step 3
Crumble the feta cheese over the salad.Step 4
Lightly toast the pine nuts and sprinkle over the salad.Step 5
Drizzle with extra virgin olive oil.Step 6
Sprinkle with herbs.
