The flavours of salty feta, bitter leaves and slightly sour pomegranate combine brilliantly to give a zing to this summery salad. It’s quick and easy to make and goes perfectly with smoky barbecue flavours.

Ingredients

  • 4 tbsp of feta cheese
  • 1 sprinkle of herbs
  • 1 drizzle of extra virgin olive oil
  • 1 large handful of salad
  • 1 small handful of pine nuts
  • 4 tbsp of pomegranate seeds

Method

  1. Step 1

    Make a bed of salad leaves and crumble the feta cheese over them.
  2. Step 2

    Cut the pomegranate in half and squeeze the seeds out over the salad, tossing them into the salad leaves.
  3. Step 3

    Crumble the feta cheese over the salad.
  4. Step 4

    Lightly toast the pine nuts and sprinkle over the salad.
  5. Step 5

    Drizzle with extra virgin olive oil.
  6. Step 6

    Sprinkle with herbs.
