Eggy Spelt Bread with Fruit

Try this different take on French toast by using spelt bread topped with fruit.Time and servings

Ingredients
- 3 tsp of honey
- 1 tsp of rapeseed oil
- 2 scoops of creme fraiche
- 50 g of raspberries, (or any berries you'd like)
- 2 slices of spelt bread, halved
- 2 eggs
- 30 g of blueberries
- 50 g of strawberries
Method
Step 1
Beat the eggs in a bowl, then soak the bread in the eggs for a few minutes, turning halfway through.Step 2
Drizzle the rapeseed oil in a non-stick pan over a high heat. When the pan is hot, add the bread. Leave it to cook for a couple of minutes then flip to the other side.Step 3
Divide the bread between two plates, place the fruit and creme fraiche on top and drizzle the honey.
