More savvy snacking... Use up your leftover yoghurt or cucumber before it needs throwing away, and whip up this easy tzatziki. Team with breadsticks, toasted pitta or chicken skewers.

Ingredients

  • 200g yoghurt
  • ½ -¾ cucumber, grated
  • 20g fresh mint, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 large or 2 small cloves garlic, minced
  • Pinch of sugar
  • 1 tbsp extra virgin olive oil (optional)
  • 1 tbsp lemon juice (optional)

Method

  1. Step 1

    Grate the leftover cucumber and squeeze out any excess liquid.
  2. Step 2

    In a large bowl, combine the yoghurt, grated cucumber, and chopped mint.
  3. Step 3

    Add the crushed garlic and a pinch of sugar. Season with salt and pepper to taste.
  4. Step 4

    If using, add the extra virgin olive oil and lemon juice then mix well to combine.
  5. Step 5

    Enjoy! Tastes great teamed with salad or breadsticks for a picky lunch.
