Easy Beany Sausage Stew

It uses pantry staples to create a rich, smoky sauce that tastes like it’s been simmering for hours, but it’s actually ready in about 30 minutes.

Ingredients

  • 6 The Best Pork Sausages
  • 2x400g tin chopped tomatoes
  • 2x400g tin butter beans, drained and rinsed
  • 2 Medium Carrots, peeled and diced
  • 1 large onion, chopped
  • 1 Beef or Vegetable Oxo cube, crumbled
  • 1 tsp dried mixed herbs (or smoked paprika for a smoky kick)
  • 1 tbsp olive oil, for frying
  • 2 garlic cloves, minced (or 1 tsp garlic paste)
  • Salt and pepper to taste
  • 200ml boiling water
  • Crusty bread rolls, optional to serve

Method

  • Step 1

    Heat the oil in a large deep frying pan or casserole pot over medium heat. Add the Morrisons The Best Pork Sausages and fry for 5–8 minutes, turning occasionally, until they are golden brown all over. Remove them from the pan and set aside on a plate (they don't need to be cooked through yet).
  • Step 2

    In the same pan (keep that sausage flavour!), add the chopped onion. Sauté for about 5 minutes until soft and translucent. Stir in the garlic and cook for another minute until fragrant.
  • Step 3

    Pour in the chopped tomatoes and the boiling water. Crumble in the Oxo cube and add the dried herbs. Stir well, then add the sausages back into the pan along with the butter beans.
  • Step 4

    Bring the liquid to a gentle simmer, then turn the heat down to low. Pop a lid on and cook for 15 minutes. If the sauce is too thick, add a splash more water; if you like it thicker, simmer with the lid off for the last 5 minutes. Season with salt and pepper to taste.
  • Step 5

    This stew is a complete meal on its own thanks to the protein-packed butter beans, but it’s delicious served with a crusty roll to mop up the tomato sauce or a scoop of creamy mashed potato. For a bit of extra hidden veg, stir in a handful of fresh spinach at the very end, the heat of the stew will wilt it in seconds. Enjoy!
