Ingredients
- 2 overripe bananas, mashed (180g)
- 240ml milk
- 110g whole egg
- 7g baking powder
- 2g salt
- 1 tbsp vegetable oil, plus ½ tsp vegetable oil for cooking
- 225g self-raising flour
Method
- Step 1In a large bowl, whisk together the mashed bananas, whole egg, 1 tbsp oil, salt, and milk until well combined.
- Step 2Sift the flour and baking powder together. Gradually add the dry ingredients to the wet ingredients, whisking constantly until you have a smooth batter.
- Step 3Leave the batter to rest for 5 minutes. This allows the gluten in the flour to relax, resulting in lighter pancakes.
- Step 4To make a pancake, heat ½ tsp oil in a non-stick frying pan over a medium-high heat until hot.
- Step 5Pour 2-3 tbsp of pancake batter into the pan and cook for a few minutes, or until bubbles appear on the surface and the edges look set. Flip the pancake and cook the other side until golden brown.
- Step 6Repeat with the remaining batter.
- Step 7Serve your delicious pancakes with your favourite toppings.
