Ingredients

  • 4 Dover sole fillets
  • 4 wooden skewers
  • 1 courgette
  • 1 red chilli (or other variety), sliced
  • 100g cooking chorizo, sliced
  • Olive oil
  • black pepper
  • Salt
  • Cooked couscous or rice, to serve
  • Roasted vegetables, e.g. peppers, onions, courgettes, to serve
  • Garlic oil, to serve
  • Fresh parsley, chopped to serve
  • Capers, to serve
  • Lime wedges, to serve

Method

  1. Step 1

    Soak the wooden skewers in water for 5 minutes to prevent them from burning.
  2. Step 2

    While the skewers are soaking, use a vegetable peeler to peel four long ribbons from the courgette.
  3. Step 3

    Place a courgette ribbon on top of each sole fillet and roll from the end into a spiral.
  4. Step 4

    Skewer a slice of chilli onto each soaked skewer, followed by a slice of chorizo, then the sole spiral, and another slice of chorizo. Repeat for each skewer. Drizzle with olive oil and season with salt and pepper.
  5. Step 5

    Place each skewer on a baking tray and cook in a preheated oven at 180°C (160°C fan, 350°F, Gas Mark 4) for 10-12 minutes, or until the fish is cooked through.
  6. Step 6

    To serve, place a bed of cooked couscous or rice in a bowl, top with roasted vegetables, and then add a Dover sole skewer. Drizzle with garlic oil and garnish with chopped parsley, capers, chilli slices, and a lime wedge.
