Ingredients

  • 80g grated pumpkin
  • 2 tsps mixed spice
  • 1 tsp ground ginger
  • 70g light brown sugar
  • 1 tsp vanilla extract
  • 170g caster sugar
  • 125ml water
  • 120ml vodka
  • 60ml strong shot of espresso, made and cooled
  • 70ml Kahlua
  • 2 handfuls of ice
  • 2tbsp pumpkin spice syrup (prepared earlier)
  • Coffee beans, to garnish
  • Activated charcoal powder or black food colouring, to colour

Method

  1. Step 1

    For the syrup, bring all the ingredients to the boil.
  2. Step 2

    Simmer until the pumpkin is soft enough to blend.
  3. Step 3

    Blend together with a hand blender or food processor.
  4. Step 4

    Pass the syrup through a fine sieve and store it in a glass bottle or jam jar.
  5. Step 5

    For the cocktail, place all ingredients in a cocktail shaker.
  6. Step 6

    Colour the liquid with the charcoal or food colouring until dark black.
  7. Step 7

    Add the ice and shake for 1 minute.
  8. Step 8

    Strain into cold martini glasses.
  9. Step 9

    Garnish the drinks with 3 coffee beans.
  10. Step 10

    Add strands of white cotton candy floss around the edge of the glass.
