Ingredients
- 80g grated pumpkin
- 2 tsps mixed spice
- 1 tsp ground ginger
- 70g light brown sugar
- 1 tsp vanilla extract
- 170g caster sugar
- 125ml water
- 120ml vodka
- 60ml strong shot of espresso, made and cooled
- 70ml Kahlua
- 2 handfuls of ice
- 2tbsp pumpkin spice syrup (prepared earlier)
- Coffee beans, to garnish
- Activated charcoal powder or black food colouring, to colour
Method
Step 1
For the syrup, bring all the ingredients to the boil.Step 2
Simmer until the pumpkin is soft enough to blend.Step 3
Blend together with a hand blender or food processor.Step 4
Pass the syrup through a fine sieve and store it in a glass bottle or jam jar.Step 5
For the cocktail, place all ingredients in a cocktail shaker.Step 6
Colour the liquid with the charcoal or food colouring until dark black.Step 7
Add the ice and shake for 1 minute.Step 8
Strain into cold martini glasses.Step 9
Garnish the drinks with 3 coffee beans.Step 10
Add strands of white cotton candy floss around the edge of the glass.
