Crispy Prosciutto Cups with Sausage and Sage Stuffing

Stuffing with a difference – succulent sausages wrapped in crispy prosciutto cups to create a Christmas taste sensation.

Ingredients

  • 1 onion, finely chopped
  • 40 g of unsalted butter
  • 75 g of breadcrumbs
  • 8 slices of prosciutto
  • 10 leaves of fresh sage
  • 150 g of sausages
  • 1 tbsp of olive oil

Method

  1. Step 1

    Heat the oven to 200°C / gas mark 6 / 180°C fan
  2. Step 2

    In a frying pan melt the butter and add in the onions for 5 – 10 mins until soft.
  3. Step 3

    Remove from the heat and transfer into a bowl to cool
  4. Step 4

    Once cooled mix in the sausage meat, breadcrumbs and sage to the onions and season to taste
  5. Step 5

    Lightly line a muffin tin with oil and cover the base and sides with prosciutto to create the cups, making sure not to leave any gaps.
  6. Step 6

    Fill the prosciutto cups with the stuffing mix and top with a sage leaf.
  7. Step 7

    Brush with oil and then bake them in the oven for 20 mins until the prosciutto becomes crispy
  8. Step 8

    Serve and enjoy.
