Ingredients
- 175 g of buttermilk
- 1 tsp of smoked paprika
- 3 tsps of southern fried seasoning
- 125 g of panko breadcrumbs
- 0.5 tsp of chinese 5 spice
- 125 g of plain flour
- 1 tsp of onion salt
- 6 chicken legs
Method
Step 1
Prepare the chicken by cutting the legs across the centre to separate the drumsticks from the thighs.Step 2
Mix the chicken in a bowl with the buttermilk and leave for 30 minutes.This will help tenderize the chicken and help the crumb mix stick.Step 3
In a separate bowl, mix the flour and breadcrumbs with all the spices including a big twist of black pepper.Step 4
Coat each piece of chicken thoroughly in the crumb and place on to a wire rack sitting on a baking tray. This will help keep the chicken crisp.Step 5
Bake in the oven at 175 degrees for 50 minutes or until the chicken is cooked through.Step 6
Serve with fries, coleslaw and charred corn on the cob.
