Ingredients
- ½ cauliflower, broken into florets
- 1 aubergine, sliced
- 3 cups of Gram flour
- Water
- 3 tsp salt
- 2 tsp caraway (ajwain) seeds
- 3 tsp chilli flakes
Method
Step 1
Slice the aubergine into rounds and break the cauliflower into small florets.Step 2
In a bowl, combine the gram flour, salt, caraway seeds, and chilli flakes. Gradually add water, stirring continuously, until a smooth and thick batter is formed.Step 3
Dip each piece of cauliflower and aubergine into the batter, ensuring they are evenly coated.Step 4
Heat a pan or deep fryer with enough oil for deep frying.Step 5
Carefully add the battered vegetables to the hot oil and fry until golden brown and cooked through.Step 6
Remove the cooked pakoras from the oil using a slotted spoon and drain on kitchen paper to remove excess oil.Step 7
Serve the hot crispy bites immediately with your favourite dips or chutneys.
