These crispy veg bites make a perfect light bite or side dish! Easy to make and perfect for sharing. Delicious!

Ingredients

  • ½ cauliflower, broken into florets
  • 1 aubergine, sliced
  • 3 cups of Gram flour
  • Water
  • 3 tsp salt
  • 2 tsp caraway (ajwain) seeds
  • 3 tsp chilli flakes

Method

  1. Step 1

    Slice the aubergine into rounds and break the cauliflower into small florets.
  2. Step 2

    In a bowl, combine the gram flour, salt, caraway seeds, and chilli flakes. Gradually add water, stirring continuously, until a smooth and thick batter is formed.
  3. Step 3

    Dip each piece of cauliflower and aubergine into the batter, ensuring they are evenly coated.
  4. Step 4

    Heat a pan or deep fryer with enough oil for deep frying.
  5. Step 5

    Carefully add the battered vegetables to the hot oil and fry until golden brown and cooked through.
  6. Step 6

    Remove the cooked pakoras from the oil using a slotted spoon and drain on kitchen paper to remove excess oil.
  7. Step 7

    Serve the hot crispy bites immediately with your favourite dips or chutneys.
