A hearty and delicious one-bowl brunch casserole for those cold winter mornings.

Ingredients

  • 6 sausages
  • 3 cloves of garlic
  • 100 g of baby spinach
  • 8 eggs
  • 2 large of potatoes (cubed)
  • 2 spring onions
  • 1 drizzel of hot sauce
  • 200 g of grated cheddar

Method

  1. Step 1

    In a large non-stick pan or skillet, grease and cook the potatoes until they are golden brown, turn down the heat and add the garlic (crushed), stir thoroughly.
  2. Step 2

    Sprinkle the cheese over the potatoes and garlic, once melted stir so all the potatoes have an even coating.
  3. Step 3

    Add the cooked sausage pieces, stir and leave on a low heat until the sausages are heated through.
  4. Step 4

    Agg the scrambled eggs, stir and cook through until warm.
  5. Step 5

    At the last minute, add the spinach so it wilts, transfer to a large bowl or serve individually.
  6. Step 6

    Garnish with Spring onions and a drizzle of hot sauce.
