Courgette, Mushroom and Bacon Pancakes

Ingredients
- 1 tsp of wholegrain mustard
- 8 rashers of streaky bacon
- 500 g of courgettes, coarsely grated
- 2 tbsp of crème fraîche
- 1 tbsp of sunflower oil
- 300 g of mushrooms, wiped and quartered
Method
Step 1
Grill the bacon until crispy. Meanwhile, heat the oil in a non-stick pan and stir-fry the mushrooms for 5 minutes until softened. Add the mustard and courgettes and stir-fry for 3 minutes until they soften a little.Step 2
Season to taste and stir in the crème fraîche.Step 3
Divide between 4 cooked pancakes and criss-cross 2 rashers of bacon on top to serve.
