Cobb Salad Pizza

Pizza dough is super easy to throw together, or you can simply buy premade bases from Morrisons and follow the recipe from step 5.Time and servings

Ingredients
- 2tsp instant yeast, for the dough
- 225g plain or pizza flour, for the dough
- 2tsp salt, for the dough
- 1tsp golden caster sugar, for the dough
- Extra virgin olive oil, for drizzling, for the dough
- 3tbsp extra virgin olive oil, for the dressing
- 2tbsp tomato puree, for the dressing
- 2tbsp red wine vinegar, for the dressing
- ½ tbsp dijon mustard, for the dressing
- 2 garlic cloves, crushed, for the dressing
- 1tsp dried oregano, for the dressing
- 100g Morrisons British Blue Stilton, crumbled
- 2 boiled eggs, peeled and roughly chopped
- 1 Morrisons Market Street Romaine Lettuce Hearts, shredded
- ½ cucumber, deseeded and finely cubed
- ½ 220g pack Morrisons The Best Dulciz Due Tomatoes, halved
- ½ red onion, thinly sliced
- 160g pack Morrisons Extra Tasty Chicken Slices with Garlic and Herb, shredded
- Finely chopped parsley, to serve
Method
Step 1
Measure 150ml warm water into a jug and stir in the yeast. Set aside for 10 mins until bubbly.Step 2
Meanwhile, stir together the flour, salt and sugar in a large bowl. Make a well in the centre. Once the yeast is ready, pour in and combine with clean hands or a wooden spoon.Step 3
With lightly oiled hands, form the dough into a ball. Knead on a lightly floured surface for 5-10 mins until smooth. Wipe out the bowl and coat lightly in oil. Place the dough in the bowl, cover and leave to rest in a warm place until doubled in size, about 1 hour.Step 4
Punch the air out of the dough, then using lightly oiled hands again, divide into 2 balls. Place on a lightly floured surface, cover with a damp tea towel and leave to rest again for 30 mins.Step 5
When you’re ready to cook, preheat the oven to 240°C/200°C fan/gas 8. Stretch the dough out into two bases and place on separate baking trays, ideally ones with holes in the bottom to allow for a crispy crust.Step 6
Whisk together the dressing ingredients and brush some onto each pizza base. Take half of the blue cheese and crumble between the bases. Bake for 8-10 mins until crisp and the cheese is melted.Step 7
Meanwhile, combine the remaining topping ingredients with the remaining dressing. Pile on top of the pizzas and sprinkle with the parsley before slicing to serve.
