Classic Lasagne

The ideal comfort food! Make this lasagne with the perfect combination of a homemade rich and meaty ragu and a creamy béchamel sauce. Time and servings

Ingredients
- 750 g of beef mince
- 3 white onions
- 2 tbsp of tomato puree
- 500 ml of vegetable stock
- 50 g of butter
- 1 litre of milk
- 1 medium of bay leaf
- 16 sheets of lasagne sheets
- 1 pinch of nutmeg
- 150 g spinach leaves
- 25 g of parmesan cheese, grated
- 400 g of chopped tomatoes
- 75 g of cheddar cheese, grated
- 50 g of plain flour
- 4 cloves of garlic, crushed
- 1 drizzle of olive oil
Method
Step 1
To make the beef ragu drizzle the olive oil in a large saucepan, add two diced onion and sauté for 5 minutes over a high heatStep 2
Add the minced beef and garlic and cook for a further 5 minutes.Step 3
Add the tomato purée, mix and cook for 1 minute.Step 4
Add the tinned tomatoes and stock, mix well. Bring to the boil, then reduce to a simmer for 45 minutes uncovered.Step 5
To make the béchamel sauce melt the butter in a large saucepan.Step 6
Add one sliced onion, plain flour and bay leaf. Cook for 1 minute.Step 7
Add milk to the pan in small additions. Each time allow the milk to warm through and then whisk to combine. This will help to avoid lumps.Step 8
Once you have added all of the milk bring to the boil and cook for 2 minutes to thicken.Step 9
Strain into a large bowl and discard the onion and bay leaf by removing with a spoon and fork.Step 10
Season with salt, pepper and a pinch of nutmeg. Set to one side.Step 11
To assemble the lasagne preheat the oven to 180C fan/200C/gas 6.Step 12
Spoon two ladles of beef ragu onto the base of a large lasagne dish that's approximately 28x28cm.Step 13
Top with 4 lasagne sheets.Step 14
Spoon over 1½ ladles of béchamel sauce and top with half of the washed spinach leaves.Step 15
Top with 4 more lasagne sheets.Step 16
Repeat with another layer of beef ragu and 4 more lasagne sheets.Step 17
Top with the remaining beef ragu and béchamel.Step 18
Sprinkle over the grated cheeses and place the lasagne dish onto a baking tray.Step 19
Cook in the preheated oven for 30-35 minutes.Step 20
Allow the lasagne to rest for 15 minutes before serving.
