Christmas Dinner Tacos

Boxing Day dinner calls for leftover tac-ho ho hos. Grab a taco shell, and pack it with leftover turkey, cranberry chutney, pan-fried onions, and shredded sprouts. Quick, easy, delicious. Time and servings

Ingredients
- 2 tbsp olive oil
- 3 garlic cloves roughly chopped
- 1 large red onion sliced into segments
- 1 red pepper sliced
- 250g Brussels sprouts, finely sliced
- 350g leftover turkey in chunks
- Small handful of jalapenos roughly chopped
- 2 tbsp chipotle paste
- 1 heaped tbsp honey
- Juice of 1 lime
- 4 tbsp mayonnaise
- 1 tsp garlic puree
- Zest of 1 orange
- 8 small flour tortillas
- 100g grated cheddar cheese
- Leftover cranberry sauce
- 1 avocado peeled and cubed
- 1/3 lettuce shredded
- 80g pomegranate seeds
Method
Step 1
Preheat oven to 200°C, fan 180°C, gas 6. Heat your oil in a large pan over a medium heat, add your garlic, onion, pepper and brussels and fry for 5 mins until softened before adding all remaining filling ingredients, giving a stir and heating through for a further 5-10 minutes. Season with salt and pepper.Step 2
Whilst heating through, mix all mayo ingredients with a crack of pepper and set to one side. Wrap your tortillas in tin foil and heat through for 5 mins in the oven (or griddle).Step 3
Now to build. Load each taco with a tsp of cranberry sauce followed by lettuce, avocado, turkey filling, Cheddar, orange mayo and a sprinkle of pomegranate seeds for easy, peasy leftover tac-ho ho hos. These Christmas tacos are going to be your new favourite Boxing Day dinner.
