
Chicken & Tomato Fajitas

This recipe is quick, flavourful, and utilises the contents of the January Price Cut fajita kit for a fantastic family meal with minimal effort.Time and servings

Ingredients
- 330g Morrisons Chicken Breast Fillets, sliced into thin strips
- 500g BBQ Fajita Dinner Kit, containing tortillas, salsa, and seasoning mix
- 2-pack Sweet Pointed Peppers, sliced into thin strips
- 400g tin Napolina Chopped Tomatoes, drained slightly
- Frank's Red Hot Original Cayenne Pepper Sauce, to taste
- Fry light olive oil
- Salt, to taste
Method
Step 1
Slice the Morrisons Chicken Breast Fillets into thin strips, about 1/4 inch thick.Step 2
Wash and slice both Sweet Pointed Peppers into thin strips, matching the size of the chicken.Step 3
Heat a large frying pan or skillet over medium-high heat.Step 4
Add the sliced chicken to the pan and cook until it is mostly done and lightly browned.Step 5
Add the sliced peppers to the pan with the chicken and cook for about 3 to 5 minutes until the peppers begin to soften.Step 6
Stir in the Fajita Seasoning Mix from the OEP BBQ Fajita Dinner Kit. Mix well to completely coat the chicken and peppers.Step 7
Pour in the contents of the tin of Napolina Chopped Tomatoes.Step 8
Stir everything together and let it simmer for 5 to 7 minutes until the sauce reduces slightly and the chicken is thoroughly cooked.Step 9
If you want spicy fajitas, add a few dashes of the Frank's Red Hot Original Cayenne Pepper Sauce at this stage.Step 10
While the filling simmers, warm the tortillas.Step 11
Transfer the chicken and pepper filling to a serving dish.Step 12
Serve immediately, allowing everyone to fill their own warmed tortillas with the chicken and tomato mixture and the salsa provided in the kit.
