Chicken and Spicy Pineapple Jam Club Sandwich

Ingredients
- 1 one tin of crushed pineapple in juice (150g)
- 1 tsp of chilli flakes
- 100 ml of sweet chilli dip
- 1 tbsp of mayonnaise
- 1 head of little gem lettuce, leaves separated
- 2 tomatoes, sliced
- 200 g of roasted chicken (sliced or shredded pieces)
- 4 slices of hovis® wholemeal medium sliced bread
Method
Step 1
To make the jam, combine the sweet chilli dip, chilli flakes and crushed pineapple with 2 tablespoons of the tinned juice into a saucepan. Heat gently and bring to a simmer for 3-4 minutes, stirring occasionally, until the mixture has thickened slightly and the pineapple is soft. Transfer into a bowl and allow to cool completely.Step 2
To build one sandwich, spread one piece of Hovis® Wholemeal with half the mayonnaise and the other slice of bread with 1 tablespoon of the jam. Layer up the chicken, tomato slices and a few leaves of lettuce on the slice with the jam, and then top with the mayonnaise slice. Skewer with a cocktail stick and slice in half or quarters.Step 3
Repeat to build the second sandwich and serve immediately.
