This salad is perfect for using up a bit of leftover chicken, it has a great crunch to it, and the peach helps to add a bit of sweetness.

Ingredients

  • 1 tsp of dijon mustard
  • 1 tbsp of orange marmalade
  • 4 tbsp of natural yogurt
  • 1 red onion, peeled and sliced
  • 3 tbsp of sunflower oil, 1 tbsp for the dressing
  • 4 slices of white bread
  • 185 g of crunchy salad
  • 2 peaches
  • 175 g of cooked chicken, torn into strips

Method

  1. Step 1

    Cut the crusts off the bread then cut into cubes.
  2. Step 2

    Heat the oil in a non-stick pan and fry the cubes until golden.
  3. Step 3

    Lift onto absorbent kitchen paper.
  4. Step 4

    Put the chicken, onion and peach slices in a bowl and toss together.
  5. Step 5

    Divide the salad between 4 serving plates, top with the chicken mixture.
  6. Step 6

    Scatter with the croûtons.
  7. Step 7

    To make the dressing, whisk together the yogurt, marmalade, sunfower oil and mustard. Drizzle over the salad to serve.
