Ingredients
- 10 rashers of bacon
- 1 egg
- 150 ml of milk
- 50 ml of vegetable oil
- 150 g of grated cheddar
- 0.5 tsp of baking powder
- 100 g of butter, plus extra for greasing
- 275 g of self-raising flour
Method
Step 1
Heat oven to 200 C/180 C fan.Step 2
Grease a 12-hole muffin tin. In a frying pan, fry the bacon for 5 minutes on a medium heat.Step 3
Let it cool then chop it up into chunks and put to the side.Step 4
In a bowl combine flour, baking powder and 1 teaspoon of salt. Mix the butter onto the flour using your fingers until it resembles breadcrumbs.Step 5
In another bowl, whisk together the milk, oil and egg. Mix in the flour mixture. Stir in the bacon and cheese and spoon into the muffin tin.Step 6
Put the tin in the oven and bake for 20 minutes or until golden brown then serve.
