Cheese and Bacon Scones

Ingredients

  • 10 rashers of bacon
  • 1 egg
  • 150 ml of milk
  • 50 ml of vegetable oil
  • 150 g of grated cheddar
  • 0.5 tsp of baking powder
  • 100 g of butter, plus extra for greasing
  • 275 g of self-raising flour

Method

  1. Step 1

    Heat oven to 200 C/180 C fan.
  2. Step 2

    Grease a 12-hole muffin tin. In a frying pan, fry the bacon for 5 minutes on a medium heat.
  3. Step 3

    Let it cool then chop it up into chunks and put to the side.
  4. Step 4

    In a bowl combine flour, baking powder and 1 teaspoon of salt. Mix the butter onto the flour using your fingers until it resembles breadcrumbs.
  5. Step 5

    In another bowl, whisk together the milk, oil and egg. Mix in the flour mixture. Stir in the bacon and cheese and spoon into the muffin tin.
  6. Step 6

    Put the tin in the oven and bake for 20 minutes or until golden brown then serve.
