Soft, fluffy muffins with cheese, ham + tasty veggies using Ella's Kitchen Pumpkin, Broccoli + Sweetcorn pouch! The perfect foodie fun activity to keep little fingers busy.  Great for lunchboxes + picnics too!

Ingredients

  • 500 ml of olive oil
  • 70 g of mature cheddar cheese- grated
  • 40 g of wafer thin ham
  • 95 ml of semi skimmed or whole milk
  • 1 ellas kitchen pumpkin, broccoli + sweetcorn pouch
  • 250 g of self-raising flour
  • 1 sprinkle of chives, chopped
  • 1 cherry tomatoes, (For Decoration)
  • 1 spinach or basil leaves, (For Decoration)
  • 1 chives, (For Decoration)
  • 1 black olive pieces, (For Decoration)
  • 50 ml of olive oil
  • 1 egg

Method

  1. Step 1

    Pre heat oven to 200’C (180 Fan)
  2. Step 2

    Sieve the flour into a bowl.
  3. Step 3

    Crack the egg in.
  4. Step 4

    Squeeze the pouch + olive oil into the bowl.
  5. Step 5

    Slowly add the milk whilst whisking until all of the lumps have gone.
  6. Step 6

    Stir in the chives, grated cheddar + ham.
  7. Step 7

    Place mixture into lightly greased muffin cases.
  8. Step 8

    Bake in the pre heated oven for 23 minutes.
  9. Step 9

    Once cool, use vegetables to decorate with the spinach + basil for ears!
