Ingredients

  • 2 vegetable stock cubes
  • 750 g of cauliflower
  • 0.5 onion

Method

  1. Step 1

    Bring 1200ml water to a rolling boil.
  2. Step 2

    Cut the Cauliflower into small chunks.
  3. Step 3

    Add all 3 ingredients to the water and boil until the cauliflower pieces are tender (approx 10 minutes).
  4. Step 4

    Season to taste and blend with a hand blender or food processor until smooth.
  5. Step 5

    Season to taste.
  6. Step 6

    Serve with crusty bread.
