Ingredients

  • 0.5 onion
  • 500 g of carrots
  • 2 vegetable stock cubes

Method

  1. Step 1

    Bring 1 litre of water to a rolling boil.
  2. Step 2

    Cut the carrots into 1cm chunks.
  3. Step 3

    Add all 3 ingredients to the water and boil until the Carrots are tender (approx 10 minutes).
  4. Step 4

    Blend with a hand blender or food processor until smooth.
  5. Step 5

    Serve with crusty bread.
