Ingredients
- 0.5 onion
- 500 g of carrots
- 2 vegetable stock cubes
Method
Step 1
Bring 1 litre of water to a rolling boil.Step 2
Cut the carrots into 1cm chunks.Step 3
Add all 3 ingredients to the water and boil until the Carrots are tender (approx 10 minutes).Step 4
Blend with a hand blender or food processor until smooth.Step 5
Serve with crusty bread.
