Chewy and soft focaccia spread with garlic butter and topped with gooey mozzarella, tomatoes and pomegranite seeds. No pizza oven required here! The addition of pomegranite seeds create sweet bursts of flavour with every bite!Time and servings

Ingredients
- 1 drizzle of balsamic glaze, (optional to drizzle on top)
- 1 handful of rocket, (optional to garnish)
- 4 salad tomatoes, sliced
- 2 whole focaccia
- 150 g of unsalted butter softened
- 250 g of mozzarella
- 4 garlic cloves, minced
- 100 g of pomegranite seeds
Method
Step 1
Pre-heat oven to gas 6, 200°C, fan 180°C. Mix the garlic and butter into a paste, season and evenly spread on top of each focaccia.Step 2
Spread out the mozzarella and tomatoes across both pizzas, season and place in the oven for 6-10 mins until the mozzarella has melted.Step 3
Remove from the oven, season, sprinkle with fresh rocket, pomegranite seeds, a drizzle of balsmic glaze. Enjoy the taste of Italy on a plate!
