Ingredients
- 100 g of butter
- 2 tbsp of milk
- 175 g of plain flour
- 24 mints
- 1 tsp of vanilla extract
- 50 g of caster sugar
Method
Step 1
Whizz the flour and butter together until the mixture resembles breadcrumbs. Add the milk, vanilla extract and sugar. Form into a ball then wrap in clingfilm and chill in the fridge for 45 minutes.Step 2
Preheat the oven to 160oC/140oC fan/Gas 2. Roll out the dough between baking parchment until 0.3cm thick.Step 3
Cut the dough into 12 triangles measuring 11 x 11 x 8cm, then cut a small triangle from the middle, leaving a 1cm border (children might need help; a template is also useful here). Make holes in the top 2 corners of the biscuits, then place the frames on a baking tray.Step 4
Put two mints in the middle of each frame. Drop blue food colouring onto the mints in 4 of the biscuits, and red colouring on another 4. Bake for 12 minutes until golden and the sweets have melted. Swirl the mint centre halfway through for an even colour.Step 5
Remove the biscuits from the oven. Leave to cool then get the kids to thread with coloured ribbon or string.
