Brunch Tacos

A twist on a classic taco, serve up brunch in style with this delicious veggie-friendly recipe.

Ingredients

  • 1 tbsp of chopped italian parsley
  • 1 tbsp of morrisons tomato salsa
  • 2 tablespoons of semi skimmed milk
  • 2 tablespoons of olive oil
  • 100 g of pulled oyster mushrooms
  • 0.5 avocado
  • 2 medium eggs
  • 2 soft tacos
  • 1 tsp of morrisons umami paste

Method

  1. Step 1

    Pull the oyster mushrooms into strips.
  2. Step 2

    Mix the oyster mushrooms with the Umami paste and season with salt & Pepper.
  3. Step 3

    Pan fry the mushrooms in a little olive oil until golden brown.
  4. Step 4

    Mix 2 beaten eggs with the milk and season with salt and pepper.
  5. Step 5

    Cook the eggs in a lightly oiled non stick pan stirring occasionally until the eggs are cooked to your liking.
  6. Step 6

    Warm your Soft Tacos in a lightly oiled pan.
  7. Step 7

    Spread a little salsa on the base of the Taco.
  8. Step 8

    Add the creamed eggs.
  9. Step 9

    Top with the Pulled mushrooms and sliced avocado.
  10. Step 10

    Finish with a little fresh chopped Italian parsley.
  11. Step 11

    Add salt and pepper to taste.
