Broccoli and Stilton - some things are just made to go together. This soup is really easy to make with just six ingredients.

Ingredients

  • 25 g of butter
  • 1 small of onion, diced
  • 450 g of broccoli
  • 500 ml of vegetable stock
  • 100 g of stilton
  • 150 ml of single cream

Method

  1. Step 1

    Melt the butter in a large saucepan, add the onion and cook gently for 5 minutes.
  2. Step 2

    Finely chop the broccoli florets and stems, reserving a couple of unchopped broccoli florets to decorate.
  3. Step 3

    Add all the broccoli to the onion plus the stock and bring to the boil. Boil for 5 minutes.
  4. Step 4

    Remove the broccoli florets for garnish, then blend the rest with the stock until very finely chopped.
  5. Step 5

    Crumble the Stilton, reserving a few crumbles to garnish the soup. Add the Stilton to the soup and whizz briefly.
  6. Step 6

    Stir in the cream and heat gently, but do not boil.
  7. Step 7

    Before serving, season to taste. Pour into bowls and garnish each bowl with broccoli florets and a few crumbles of Stilton.
