Ingredients

  • 1 small handful of rosemary
  • 2 tbsp of olive oil
  • 2.5 kg of morrisons leg of lamb, 2kg/2,5 kg
  • 1 pinch of pepper
  • 2 ml of fresh lemon
  • 1 pinch of salt

Method

  1. Step 1

    Remove all wrapping from the lamb, pat dry with kitchen paper and place in a large roasting tin.
  2. Step 2

    Pre heat the oven to 170°C/Gas 5.
  3. Step 3

    Mix the rosemary, crushed garlic, olive oil and lemon juice together in a bowl. Season well with salt and pepper.
  4. Step 4

    Pour the marinade over the lamb. If you have time why not allow the lamb to marinate in the fridge over night to really allow the flavors to develop.
  5. Step 5

    Cover the lamb with foil and roast for 1.30 hrs, remove the foil, baste with meat juices for the tin and allow to brown for the remaining time. Sprinkle with any remaining rosemary.
