Ingredients
- 75 g of peanuts, roughly chopped
- 5 tablespoons of mixed seeds
- 1 tsp of baking powder
- 125 g of dates, chopped
- 3 bananas, mashed
- 1 egg
- 150 g of peanut butter
- 250 g of oats
- 1 tsp of cinnamon
- 1 tsp of vanilla extract
- 0.25 g of salt
Method
Step 1
Preheat your oven to 190°C (170°C fan) gas mark 5. In a large mixing bowl, mix together bananas, egg, peanut butter and the vanilla extract.Step 2
Add the oats, cinnamon, baking powder, salt, 4 tbsp seeds, dates and peanuts. Mix until all the ingredients are coated.Step 3
Press the mixture firmly into a lined large tin, equally spaced and around 3cm deep and garnish with the remaining 1 tbsp of seeds.Step 4
Bake for 30-35min until golden brown and firm.Step 5
Allow to cool before cutting into bars. Keep the bars in an airlock container.Step 6
Eat and enjoy.
