Legend has it the Bakewell cake was invented accidentally, when the almonds, sugar and eggs ended up as a layer of custard over the jam instead of being used to enrich the pastry, as intended. What a delicious accident...Time and servings

Ingredients
- 150 g of caster sugar
- 1 tsp of almond extract
- 80 g of self-raising flour
- 150 g of unsalted butter
- 3 eggs, beaten
- 100 g of ground almonds
- 30 g of flaked almonds
- 200 g of blackberries
- 2 tbsp of demerara sugar
Method
Step 1
Preheat the oven to 180ºC/160ºC fan/Gas 4. Grease and line a 20cm round loose-based cake tin with baking parchment.Step 2
In a bowl, cream the butter and sugar together until fluffy. Add the eggs, almond extract, ground almonds and flour and mix well.Step 3
Spread the mixture evenly in the prepared tin. Scatter blackberries over the top then sprinkle over the flaked almonds and sugar.Step 4
Bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean.
