Ingredients

  • 150 g of caster sugar
  • 1 tsp of almond extract
  • 80 g of self-raising flour
  • 150 g of unsalted butter
  • 3 eggs, beaten
  • 100 g of ground almonds
  • 30 g of flaked almonds
  • 200 g of blackberries
  • 2 tbsp of demerara sugar

Method

  • Step 1

    Preheat the oven to 180ºC/160ºC fan/Gas 4. Grease and line a 20cm round loose-based cake tin with baking parchment.
  • Step 2

    In a bowl, cream the butter and sugar together until fluffy. Add the eggs, almond extract, ground almonds and flour and mix well.
  • Step 3

    Spread the mixture evenly in the prepared tin. Scatter blackberries over the top then sprinkle over the flaked almonds and sugar.
  • Step 4

    Bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean.
