Ingredients
- 1 clove garlic, crushed
- 1 piccolo tomato & basil sauce
- 25 g of cheddar cheese, grated
- 1 tsp of fresh coriander or parsley, chopped
- 0.5 avocado, sliced
- 0.5 tin black beans
- 1 small tomato
- 0.5 tin sweet corn
- 1 red or yellow pepper, cored and diced
- Hard taco shells
Method
Step 1
Chop your tomato and pepper and add them to a heavy bottomed sauce pan along with the garlic, black beans, corn and 80 ml of water.Step 2
Bring to a simmer and cook on a gentle heat for around 15 minutes. Then add the Piccolo tomato sauce and heat through.Step 3
Mash with a fork or serve as is with the avocado, fresh herbs and cheese. This filling is delicious on its own but we suggest serving in some crunchy taco shells, or try it with cooked noodles or warm tortillas.
