Ingredients

  • 100 g of cheese
  • 2 tsp of ground paprika
  • 500 g of lean beef mince
  • 1 pinch of salt and pepper
  • 100 g of cheese
  • 500 g of lean beef mince
  • 2 tsp of ground paprika
  • 400 g of chooped or cherry tomatoes
  • 1 garlic clove
  • 1 onions
  • 6 floure tortilla
  • 3 tbsp of fresh coriander
  • 1 tbsp of worcester sauce
  • 2 tbsp of tomato puree

Method

  1. Step 1

    Preheat the oven to 200°C, 180°C Fan, Gas mark 6.
  2. Step 2

    Heat a large, shallow, non-stick frying pan until hot and cook the beef, onion and garlic for 5-7 minutes until brown. Add the paprika, canned tomatoes, tomato purée, and Worcestershire or brown sauce. Season.
  3. Step 3

    Bring to the boil, reduce the heat and simmer for 10-15 minutes. Stir through the coriander or mixed herbs.
  4. Step 4

    Place a tortilla on a large non-stick baking tray and spoon over a portion of the mince mixture evenly and a handful of cheese. Repeat with the remaining tortilla ingredients and top with the remaining cheese.
  5. Step 5

    Bake for 10 minutes or until the cheese melts. Cut into quarters and serve with salad leaves and a soured cream dip.
