Ingredients
- 500g lean beef mince
- 350g closed cup mushrooms, halved
- 1 onion, chopped
- 300ml beef or vegetable stock
- 150ml red wine
- 400g tin of chopped tomatoes
- 1-2 garlic cloves, crushed
- 1 tsp dried oregano
- 1 bay leaf
- 1 tbsp tomato puree
- 1 tbsp olive oil
- Salt and freshly ground black pepper
- Cooked spaghetti, to serve
Method
Step 1
Heat the oil in a large casserole or pan; add the mince and onion and sauté over a high heat for 5 mins until the mince is lightly browned.Step 2
Add the garlic and mushrooms and sauté for a further 3 mins.Step 3
Add the remaining ingredients and season to taste.Step 4
Bring to the boil, cover and simmer for 20 mins, removing the lid halfway through cooking or until the mushrooms are tender and the sauce lovely and thick.Step 5
Remove bay leaf, adjust the seasoning as necessary.Step 6
Serve with freshly cooked spaghetti.
