A quick and easy beef and mushroom spaghetti recipe! This simple mince recipe is ready in 40 minutes and is a perfect family dinner. With a rich, thick sauce, it's a comforting meal you'll want to make again and again.

Ingredients

  • 500g lean beef mince
  • 350g closed cup mushrooms, halved
  • 1 onion, chopped
  • 300ml beef or vegetable stock
  • 150ml red wine
  • 400g tin of chopped tomatoes
  • 1-2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tbsp tomato puree
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • Cooked spaghetti, to serve

Method

  1. Step 1

    Heat the oil in a large casserole or pan; add the mince and onion and sauté over a high heat for 5 mins until the mince is lightly browned.
  2. Step 2

    Add the garlic and mushrooms and sauté for a further 3 mins.
  3. Step 3

    Add the remaining ingredients and season to taste.
  4. Step 4

    Bring to the boil, cover and simmer for 20 mins, removing the lid halfway through cooking or until the mushrooms are tender and the sauce lovely and thick.
  5. Step 5

    Remove bay leaf, adjust the seasoning as necessary.
  6. Step 6

    Serve with freshly cooked spaghetti.
